F .eks. &nbsp;kan det samme niveau af bitterhed opfattes helt forskelligt af 2 forskellige personer. Dette til forskel fra det vi kunne kalde pr\u00e6ferencer. Alts\u00e5 at nogle personer<em>&nbsp;foretr\u00e6kker<\/em>&nbsp;et h\u00f8jt bitterhedsniveau, medens andre&nbsp;<em>foretr\u00e6kker<\/em>&nbsp;et lavt niveau.&nbsp;<span style=\"font-family: var( --e-global-typography-text-font-family ), Sans-serif;font-weight: var( --e-global-typography-text-font-weight );font-size: 1rem\">Disse forskelle i b\u00e5de f\u00f8lsomhed og pr\u00e6ference betyder at det som kunne v\u00e6re et perfekt mad\/vin match for en person, kan synes ordin\u00e6rt, eller endog ubehageligt, for en anden person.<\/span><\/p>\n<p><\/p><\/div>\n<div>Der m\u00e5 derfor tages individuelle hensyn n\u00e5r man skal matche mad og vin, og regel nr. 1 m\u00e5 altid v\u00e6re<em>&nbsp;<strong>at man skal drikke en vin man kan lide!<\/strong>&nbsp;<\/em>&nbsp;Man skal jo ikke servere sin yndlings fadlagrede Chardonnay til maden, hvis man ved at g\u00e6sten ikke bryder sig om Chardonnay &#8211; og slet ikke om fadlagrede hvidvine.<\/div>\n<div>&nbsp;<\/div>\n<div>N\u00e5r alt dette er sagt, s\u00e5 er det jo ogs\u00e5 s\u00e5dan at der er nogle vejledende retningslinier som man kan l\u00e6ne sig op ad. De tager oven i k\u00f8bet udgangspunkt i nogle rimeligt objektive fakta, omhandlende forskellige smagskvaliteters indflydelse p\u00e5 hinanden.<\/div>\n<div>&nbsp;<\/div>\n<div>Det er s\u00e5dan at, den mad vi spiser, har indflydelse p\u00e5 smagen af den vin vi drikker dertil, og vin kan have indflydelse p\u00e5 smagen af mad. Omvendt vil en syrefattig vin kunne fremst\u00e5 flad og uinteressant.<\/div><div>\u00a0<\/div><div><strong>Salt i mad:<\/strong><span style=\"font-size: 1rem\">\u00a0<\/span><\/div><div><em>\u00d8ger<\/em>\u00a0vinens fyldighed.<\/div><div>\u00a0<em style=\"font-size: 1rem\">Neds\u00e6tter<\/em><span style=\"font-size: 1rem\">\u00a0oplevelsen af astringens, bitterhed og syre i vinen.<\/span><\/div><div>\u00a0<\/div><div>Salt er en vin-venlig komponent i madlavningen, som bl\u00f8der nogle af vinens h\u00e5rdere elementer op.<\/div><div>\u00a0<\/div><div><strong>Bitterhed i mad:<\/strong><strong style=\"font-size: 1rem\">\u00a0<\/strong><\/div><div><em>\u00d8ger<\/em>\u00a0oplevelsen af bitterhed i vinen<\/div><div>\u00a0<\/div><div>Oplevelsen af bitterhed er meget individuel. Som hovedregel adderes bitterheden i maden med bitterheden i vinen, s\u00e5ledes at den samlede oplevelse kan blive uharmonisk bitter.<\/div><div>Men som sagt &#8211; meget subjektiv effekt.<\/div><div>\u00a0<\/div><div><strong>Umami i mad:<\/strong><strong style=\"font-size: 1rem\">\u00a0<\/strong><\/div><div><em>\u00d8ger<\/em>\u00a0oplevelsen af bitterhed, astringens, syre og alkohol.<\/div><div>\u00a0<\/div><div><em>Neds\u00e6tter<\/em>\u00a0oplevelsen af fylde, frugt og s\u00f8dme<\/div><div>\u00a0<\/div><div>Umami er en krydret smag, som til forskel fra de andre 4 prim\u00e6re smagsindtryk, kan v\u00e6re sv\u00e6r at isolere. Umami er oftest til stede sammen med andre smage, f.eks sammen med salt i Natrium-Glutamat (det 3. krydderi) eller med andre smagselementer som feks i tilberedte eller t\u00f8rrede svampe.\u00a0<\/div><div>Man oplever det bedst hvis man smager en r\u00e5 champignon, og derefter giver den 30 sek. i mikroovnen, og s\u00e5 smager den igen. Umamismagen bliver kraftigt fremh\u00e6vet af opvarmning.<\/div><div>Mad, som traditionelt synes sv\u00e6r at parre med vin, har ofte et h\u00f8jt indhold af Umami uden salt. F eks asparges, \u00e6g, champignon og modne bl\u00f8de oste.<\/div><div>Anden mad som har h\u00f8jt Umamiindhold kan samtidigt have et h\u00f8jt saltindhold, som modvirker Umami&#8217;s effekt p\u00e5 vin. F eks r\u00f8get fisk, saltet t\u00f8rret k\u00f8d og h\u00e5rde oste (ex parmesan).<\/div><div>\u00a0<\/div><div><strong>Andre overvejelser<\/strong><\/div><div><strong>\u00a0<\/strong><\/div><div><strong>Smagsintensitet:\u00a0<\/strong>Det er s\u00e6dvanligvis en god ide, nogenlunde at matche smagsintensiteten i vinen og maden, s\u00e5 den ene ikke overd\u00f8ver den anden.<\/div><div>Dog kan man have held med at parre en st\u00e6rkt krydret ret, som feks en indisk Curry, med en let, enkel &#8211; ikke fadlagret &#8211; hvidvin. Eller omvendt en let dessert, med en af de mere intenst smagende s\u00f8de vine.<\/div><div>\u00a0<\/div><div><strong>Syre og fedt:\u00a0<\/strong>Mange mennesker p\u00e5sk\u00f8nner kombinationen af fede og\/eller olierede retter, og en syrerig vin. Man f\u00e5r en fornemmelse af at vinen, s\u00e5 at sige, sk\u00e6rer godt igennem fedtet og renser munden p\u00e5 en behagelig m\u00e5de.<\/div><div>Der er her tale om en helt subjektiv fornemmelse.<\/div><div>\u00a0<\/div><div><strong>S\u00f8dt og salt:\u00a0<\/strong>Ligeledes subjektiv, er gl\u00e6den ved at kombinere s\u00f8dt og salt. En kombination rigtig mange finder behagelig. Klassisk match er jo s\u00f8d vin og bl\u00e5skimmel ost.<\/div><div>\u00a0<\/div><div><strong>Hvad g\u00f8r man s\u00e5 i praksis?<\/strong><\/div><div>\u00a0<\/div><div>Der er desv\u00e6rre ikke noget simpelt svar p\u00e5 dette. Det er dog s\u00e5dan, at de ovenfor beskrevne effekter af diverse smagskvaliteter p\u00e5 oplevelsen af vin, er generelt accepterede. Der er mange klassiske mad og vin sammens\u00e6tninger: gedeost og sancerre, \u00f8sters og champagne, stilton og portvin.
